Who doesn’t love the combination of BBQ chicken with baked potatoes? And if it is easy to make then that’s definitely the perfect go-to dinner dish.

A bit sweet, a little salty, and bursting with flavour! And they just require six basic ingredients to produce.

Although this dish is quite simple, it does take a little longer to prepare because the sweet potatoes must be baked twice.

Delicious BBQ chicken with sweet baked potatoes is ideal for a weekday supper, appetisers for a dinner party or game night, or weekday meal prep. They’re high in protein, complex carbohydrates, and healthy fat; mix them with a few veggies for a well-balanced lunch.

1. Sweet potatoes

2. Oil

3. Red onion

4. Shredded chicken

5. Barbecue sauce

6. Mayo

7. Salt and pepper

8. Optional toppings – green onions, cilantro or parsley, sour cream/greek yoghurt.

How to Make BBQ Chicken with Baked Potatoes

1. Make the potatoes. Preheat the oven to 400°F and prepare a parchment paper-covered baking sheet. Clean the sweet potatoes and pierce them using a fork. Roast for 50 minutes, or until tender, on a baking sheet covered with parchment paper.

2. Make the chicken combination approximately 5 minutes before the sweet potatoes are done. Warm the avocado oil in a small pan over medium heat for about 30 seconds. Sauté the onion, salt, and pepper for 3-4 minutes, turning periodically. Cast aside in a standard-size mixing dish.

3. When the sweet potatoes are done, split them into two halves lengthwise and scrape out the majority of the interior flesh, preserving a thin layer to keep the form. Place the interior in the same dish as the onions. Combine the shredded chicken, 1/2 cup BBQ sauce, and 1/3 cup mayo in a mixing bowl. Stir until everything is properly blended. Sprinkle with a little salt and pepper.

4. Return the mixture to the sweet potato skins in an even layer. Reduce the oven temperature to 350°F and bake for another 25 minutes, or until heated. In a small dish, combine the remaining 1 tablespoon BBQ sauce and 1/2 tablespoon mayo. Drizzle evenly over twice-baked sweet potatoes when they’re done.

5. If using, top with extra toppings and serve.
