What You’ll Need:

  • 1 cup of water
  • 2 apples
  • Cinnamon to dust on top of the chips
  • Juice of 1 lemon

For the Cashew Cinnamon Dip:

  • 1 tsp. cinnamon
  • Salt to taste
  • 1 tbsp. honey
  • 1 medium apple (cored and quartered)
  • 1 cup raw cashews
  • ½ cup water

  • Add the cashews in a bowl of water and cover it. Let them sit in there for a few hours or even overnight.
  • Preheat oven to 200F.
  • Line 2 baking sheets with parchment paper
  • Add the lemon juice in a glass bowl with water. The bowl should be deep enough so that the apples can be rinsed in there.
  • Cut the apple in thin slices and run them through the lemon water.
  • Place each apple slice on the baking sheet, sprinkle some cinnamon on top and place in the oven.
  • Flip the apple slices after 90 minutes. Your apples will be done when they are crisped up; this might take around 3 hours. Also, they will further crisp up as they cool.
  • While your apples are cooking, drain the cashews and thrown them in a food processor along with the honey, quartered apple and cinnamon. Slowly mix water in it until you reach the desired consistency. Sprinkle some salt if desired.
  • Serve the apple chips with the cashew cinnamon dip.
