Healthy and Delicious Avocado Salad

Avocado Caprese Salad

The easiest salad you can ever make!

What You’ll Need:

  • 1/2 avocado (pitted and sliced)
  • 2 cups fresh arugula leaves
  • 3 slices fresh mozzarella cheese
  • Fresh basil leaves
  • 2-3 baby tomatoes (sliced)

For the Dressing:

  • Pinch of sugar or honey
  • 1 tbsp. extra virgin olive oil
  • Salt and freshly ground black pepper
  • 1 1/2 ts. vinegar

Method:

  • Take a medium size bowl and add your arugula leaves, avocado, baby tomatoes, mozzarella cheese and basil leaves.
  • In a small bowl, whisk the olive oil, vinegar, sugar, salt and pepper together.
  • Pour the dressing on top and and toss to coat.
  • Dive in!
