Avocado Caprese Salad
The easiest salad you can ever make!
What You’ll Need:
- 1/2 avocado (pitted and sliced)
- 2 cups fresh arugula leaves
- 3 slices fresh mozzarella cheese
- Fresh basil leaves
- 2-3 baby tomatoes (sliced)
For the Dressing:
- Pinch of sugar or honey
- 1 tbsp. extra virgin olive oil
- Salt and freshly ground black pepper
- 1 1/2 ts. vinegar
Method:
- Take a medium size bowl and add your arugula leaves, avocado, baby tomatoes, mozzarella cheese and basil leaves.
- In a small bowl, whisk the olive oil, vinegar, sugar, salt and pepper together.
- Pour the dressing on top and and toss to coat.
- Dive in!
