The ingredients needed to make this dish are as follows:

  • 1 cup of all purpose flower
  • 1 and a half cup of cocoa powder (unsweetened)
  • 1 teaspoon baking powder
  • a pinch of salt
  • 1/4 cup of vegetable oil
  • half a cup of granulated sugar
  • 1/4 cup of brown sugar (packed)
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • 1/4 cup of confectioner’s sugar (for the coating)

Recipe:

  • You take a small bowl and add flour, cocoa powder, baking powder and salt into it. You whisk these ingredients together until they combine. Then you keep it to a side.
  • Then you take a medium bowl and put vegetable oil and sugar in it. Then you take a hand mixer, put it on medium low speed and whisk these ingredients together until they combine.
  • Then, at a time, add vanilla and eggs into the mixture and continue to whisk until the all the ingredients come together.
  • Then you combine the dry mixture with the wet mixture and whisk them both together but on low speed.
  • Once combined, you then place a plastic wrap on the bowl and let the mixture chill in the refrigerator for at least two hours or overnight.
  • If you do plan on letting them chill overnight, then do take them out 10-20 minutes before rolling them into balls. This allows them to get some warmth which makes them thinner and easier to spread.
  • Then you preheat the oven to 350 degrees Fahrenheit. Line a half sheet baking pan with a silicone mat or parchment paper and set aside. Place confectioners’ sugar into a shallow plate.
  • You then remove the cookie dough from the refrigerator. Then, through a cookie scoop, scoop out the cookie dough one by one and roll them into a ball.
  • Once they are rolled into a ball, you coat them in confectioners’ sugar. You then take the coated cookie doughs and place them two inches apart on the lined baking sheet.
  • Place them in the oven for about 10-12 minutes, until they set. Once you take them out from the oven, you let them cool for a bit. Let these cookies cool in the baking sheet for five minutes. After that transfer them to a wire cooling rack to allow them to cool completely.
